Viticulture
Navarino Milestone Wines represent the classic Australian wine styles, and our viticulture also reflects this philosophy.
We carefully select vineyards from our Australian regions that have proven history and pedigree of producing premium wines. These vineyards, older than 20 years, have reached a level of quality and consistency that Milestone requires.
Minimising water use in the vineyard ensures a lighter crop with better characteristics for making premium wines, and small grape berries also ensures more colour, body and structure in the resultant wines. Careful attention to pruning during the Winter months is essential to achieving these goals, along with experienced grapegrowing management for the rest of the year.
Wine Making
The smaller berries for these wines are fermented in modern fermentation tanks especially developed for premium wine production. Fermentation is long, with no less than ten days fermentation on skins to ensure maximum colour and flavour extraction from the skins. Multiple daily pump overs of the ferment ensure maximum extraction and efficient fermentation rate, while temperature control by qualified winemakers control tempers the lively process. Gentle pressing is used to ensure the wines classic varietal aromas and flavours are not compromised or lost. Selected American and French Oak are used to mature the wine, bringing softness and finesse and also delightful nuances of oak derived flavour.
Tasting note
A magnificent example of Australian Shiraz. Light yields and small berries give the wine a deep colour and intense fruit flavours. Lifted Aromas of plum and spice lead to the full but soft palate. Aged in French and American oak for 12 months, the oak adds to the flavour and texture, and contributes to the long and satisfying finish of the wine.
