38 Days refers to the length of time the wine fermented on skins. A normal ferment is around six to eight days – any longer is not very practical but the benefits are there if you can give the wine the time. After 38 days the colour extraction is wonderful, the tannins have broken down and integrated into the palate. You would think after all this time it would be a big tannic wine, but it’s the very opposite. The time on skins results in a subtlety of bouquet and flavours.

Description

Hastwell & Lightfoot is a partnership of two families who came together in 1988 to plant a vineyard. From that simple objective it has grown to include 40 acres of vineyard with a diverse selection of varieties including Viognier, Vermentino, Tempranillo, Cabernet Franc and Barbera, plus more; a winery, two wine brands, 10 different wine styles, a healthy export and domestic market and three acres of olives for Extra Virgin oil.

The vineyard is located on the deep sand hills of the north side of McLaren Vale which by nature of the geology causes vines to produce fruit that has flavours in the more subtle spectrum, as different to the full blown which often results from the heavier soils. All wines made are from estate grown fruit using vineyard practises which are very close to organic. The objective when making wine is to let the fruit speak for itself, that is, using minimal intervention.

The range includes Shiraz, Cabernet Sauvignon, Cabernet Franc, Tempranillo, Chardonnay, Vermentino, plus some blends of these varieties.
