Description

Viticulture
The Shiraz vines were planted in 2001. Each year the vines are spur-pruned to accommodate a vertical shoot positioned trellis ensuring fruit exposure and even ripening. The vines are drip irrigated using a regulated deficit irrigation program to produce low yielding (2-3 tonne/acre) richly flavoured grapes.
Wine Making
The grapes were de-stemmed and partially crushed into multiple open top stainless steel fermenters. The fermentation was kept between 18-22°c and lasted 18 days with the juice being jetted over the cap 3-4 times a day to gently extract colour and flavour. After fermentation, the wine was pressed to tank where it underwent its Malo-Lactic fermentation.
The wine then spent 12 months in new French oak Hogs Heads before being filtered and bottled.
Tasting note
This super premium Shiraz opens with a vibrant purple colour, expressing an abundance of blue fruits, violets and cinnamon spice aromas that fill the glass. The juicy supple tannins encase a palate rich with powerful plum, blueberry and liquorice complexities. The wine has a very long and ever evolving finish from the 12 months maturation in French oak Barriques and will age beautifully from time in the cellar. Bottled under VINC+ corks which are TCA free with a low Oxidation rate. This super premium Shiraz is presented as an example of one of our most crafted and prized wines. Awine to be truly savoured and rewarded with
cellaring for up to 10 years.
