PALATE
The nose offers a complex bouquet of primary fruit
including mulberries and plums, as well as, notes of clove
and liquorice – all of which is underscored by the most
delicate hint of toasty oak. The palate is ripe, rounded and
soft with velvety tannins and sweet mulberry juiciness. The
persistent aftertaste is of black currant jam and toast. This
is a rich full weighted wine with a well-rounded tannic
structure that is smooth and generous in fruit flavour.
WINE
This is a rich, well-rounded red wine that is smooth, complex
and very long in flavour. The nose offers a generous
bouquet of fruit and spice, plums, mulberry, licorice, forest
berries and a hint of gaminess. The palate is the highlight of
the wine, exhibiting the rich and vibrant varietal berry-fruit
flavours which are soft and easy to drink. This wine is well
suited to cheeses, Italian cuisine, red meats and even some
spicy Asian dishes.
WINEMAKING NOTES
The grapes were crushed and fermented on skins under
controlled temperatures for extraction of deep colour, fruit
flavours and to produce a rich full bodied structure. The
fermenting wine was drained and gently pressed from skins
once dry. The wine was stored under controlled temperature
conditions to preserve fresh fruit characters. Free run wine
was used in preference to the pressing fraction to avoid any
harshness and to maintain the clarity of the fruit character.
