Viticulture
Flourishing in Australia’s clear and sunny grapegrowing regions, Navarino Dawn’s vineyard’s are managed with a high
level of technology, but coupled with tradition learned from three generations of grape growing. Particular care is
shown at every stage of growing, from the exciting stage of budburst at the start of the season through to harvest, leaf
fall and eventually pruning the winter dormant vines at the end of the season. Each season our grapes are grown to
show the best flavours of Australia.
Wine Making
With the goal of fresh and fruit driven Australian wine, our winemakers carefully handle every production process in our
modern winery. Fermentation of the grapes is temperature controlled for a full 7 days in modern fermentation tanks.
Winemakers carefully manage the fermentation rate to ensure the optimum flavour profile is achieved prior to pressing
though our gentle air-bag press. Oak maturation is done using French oak to carefully manage the character of the
wine and bring traditional nuances of oak flavours.
Tasting note
Dawn represents fresh and fruit driven Australian wine. This Cabernet Sauvignon has a strong crimson colour with lifted Cabernet aromas of capsicum and blackcurrant. The palate is encased in fine tannins that give the wine a subtle roundness allows the cherry and blackcurrant notes to shine through. A great wine for all occasions.
