Fierce III 2019 Cabernet Sauvignon

The 2019 growing season was dry through winter and spring and it continued that way until harvest, producing lower yields and small berries.
Grown on the Estate vineyards at Rowland Flat and Lyndoch in southern Barossa Valley. The single wire trellised vines planted in 1995 and 2004 allow for dappled light at the fruit zone to produce optimal ripeness, which is colour, flavour, tannin and sugar development combined. The grapes were harvested on flavour and beautiful expressions of varietal character.
Pair with Low and Slow BBQ it will match the intensity and richness to this wine, perfect for those long Sunday gatherings.

Colour: Glossy Queen garnet plum with purple crimson hues.
Nose: Plums, clove, brown spices and dark chocolate.
Palate: This wine is rich, generous and rounded. A mid palate dark fruit and spicy flavour explosion with velvety tannins from fruit and oak giving depth and length. The fruit characters of dark chocolate and clove notes typical of Barossa Valley Shiraz brings a satisfying intense persistent full bodied red wine.
Making: This wine was fermented at 22-28C in stainless steel tanks for 10-18 days and pumped over twice daily. Optimum skin contact married with American oak maturation for 29 months ensures length and structure on the palate. The Fierce III Shiraz was 100% matured in new oak ( put percentage here) and seasoned oak (put percentage here) with various toasting levels.At the heart of our winery is family, the seed from which all else grows. Grown on the Estate vineyards, at Rowland Flat in southern Barossa Valley. Sourced predominately from our Winery block. The vines are planted in 1995 on a single wire trellis managing yield to low/moderate and facilitating dappled sunlight to the fruit critically important to Cabernet Sauvignon to achieve tannin ripeness.

Colour: Black cherry, with vibrant garnet hues.
Nose: Varietal aromas of Cassis, blackcurrant and red berry fruits. Hints of spice and toast from the American oak.
Palate: Intensely varietal Cabernet Sauvignon flavours on the palate. Full bodied, harmonious with upfront fruit characters and cocoa tannins that fan out from beginning to finish. Savoury notes of black olive and chocolate give length and structure to the wine.
Making: This wine was fermented at 25-28C in stainless steel tanks for 7-10 days and pumped over twice daily. Optimum skin contact married with 100% American oak maturation with 75% new oak for 29 months. A strict regime of bi monthly barrel topping to support the tannin evolution was employed. Managing tannin extraction from the fruit and oak is paramount in Cabernet Sauvignon to ensure a wine of structure and length without harshness or overt dryness.
