2015 Kangaroo Island –Cabernet Sauvignon

In 1991, fifth – generation Islanders Michael and Rosie Florance joined with the Amadio family to produce the first commercial Kangaroo Island (KI) Wine, under the Kangaroo Island Trading Company brand.

The grapes were harvested in late April at 13.5 Be`. Once crushed, a slow ferment was controlled to extract colour but careful not to draw out the aggressive tannins that Cabernet is well known for.

Matured in a selection of new and used French oak for 15 months. Bottled in late September 2016 That wisp of fine herbaceousness the Varietal character that defines the best Cabernets of the world is in this wine. The finesse of this wine is such that drinking now is a sheer delight or when you are 10 -20 years older [as the wines will be], will be a further experience.
