Wine Making
Grown in the coolest area of the Bendigo Wine region, this cool climate Chardonnay was carefully night harvested to ensure the grapes were as cool as possible when delivered to the winery for crushing and pressing. The juice was clarified using traditional techniques after pressing. Fermentation was conducted with portions in brand new European oak 300 litre barrels. Fermentation in barrel was temperature controlled by storage in cool room, and the fermenting wine was checked and tasted daily by our winemaking team. After fermentation, the wine was further matured in the barrels, resulting in a please roundness on the palate.
Tasting note
Opening with a lively straw colour this super premium cool climate Chardonnay is abundant with rich citrus and stone fruit aromas that are supported by fresh nougat and vanilla notes from barrel fermentation. The wine spent 12 months in a combination of French and European oak which gives the wine a long toasted hazelnut and cinnamon complexity.
A wine to be truly savoured and rewarded with cellaring for up to 8 years.
