Viticulture
Navarino wines are grown in selected vineyards in the South and East of Australia, across some of Australia’s finest regions. Careful management techniques are used to monitor every stage of growing in the clean environment of our regions. Traditional methods of growing are enhanced by modern practices to ensure Navarino Wines are consistent and display the fresh fruit and lively varietal characters that we seek to see in Australian premium wines. Cropping levels are monitored to ensure that the vines produce smaller crops of more flavoursome and better quality grapes.
Wine Making
Australia has became famous for production of high quality wines by developing and using modern winemaking techniques to ensure grapes are handled gently and that the resulting wines retain maximum fruit freshness and character.
Navarino wines are fermented for a long period of ten days on skins while the fermentation is conducted. Close monitoring by winemakers and careful daily analysis ensures fermentation produces full bodied and flavoursome wines.
Careful maturation of the wine using French oak achieves satisfying characters of toasted vanilla that help build the wines structure.
Tasting note
This deeply concentrated and varietal Cabernet opens with cassis, black current and cinnamon spice aromas. A warm and finely structured mouthfeel finishes long with toasted vanilla and cherry flavours from time spent in French Oak. A wine to cellar for up to 10 years.
